A wonderful low-alcohol alternative to gin and tonic
A classic gin and tonic with an alcohol content of over 40% vol. still has an alcohol content of around 13% vol. in the glass even after dilution with tonic. This is roughly equivalent to a heavy red wine, which can be quite a lot on an afternoon on the terrace.
That’s why we also like to replace the gin with this wonderful organic liqueur wine from the Speckbirne pear with 18.2% by volume. If you mix this with pHenomenal Tonic, you get a refreshing long drink with only about 4.5% by volume.

The Austrian Mostviertel does not bear its name by chance: here, in the foothills of the Alps to the southwest of the Waldviertel and Weinviertel, cider is treated as a cultural asset. And while apples are the predominant fruit in most cider regions, in the Mostviertel it is pears. The region is characterized by orchards that produce over 300 varieties of pears, with around 20 pear varieties being used for cider production.
One of these is the bacon pear, which owes its name to the shine of its skin. Its high sugar content, low acidity and low tannin content make it ideal for processing into juice or spirits. The must made from it is very mild, but its alcohol content is among the highest of all cider pears. Organic distiller Josef Farthofer bases his SPECKBIRNE 302 on Pineau de Charentes and stops the fermentation of his pear must by adding pear brandy. In this way, the natural sweetness is retained and no sugar is added. With an alcohol content of 18.2% vol., the must fortified with pear brandy is stored in steel tanks.

Josef Farthofer is a farmer and passionate distiller. He converted both his farm and his distillery to organic at a very early stage. Not only are the raw materials at Farthofer organic. In the production cycle, he pays strict attention to growing as many raw materials as possible himself, efficiently reusing by-products such as stillage or, for example, feeding the waste heat generated during distillation into the municipal grid to supply public facilities. The crystal-clear water for the fires comes from a family-owned drinking water spring in the neighboring Mühlviertel. For almost 20 years, Josef Farthofer has been running a nature conservation project on the land around the spring together with the WWF and the state of Upper Austria, which aims to reintroduce rare meadow breeding birds.
